Robin's Most Excellent Quilting Adventure!

Her first quilt!
She put a lot of hard work into her first quilt and it paid off.

She's working on her second one.  She quilting it as she sews the scalloped squares onto the top of the fabric.  There's a picture of the back of it too.

Here's the recipe for the yummy cupcakes she served at our meeting.

Cinnamon Toast Cupcakes (from the book the Cake Doctor) Gourmet Cupcakes
1 pkg, yellow cake mix (I use Betty Crocker)
1 pkg. (3.4 oz) sm. vanilla instant pudding
1 1/4 c whole milk
3/4 c. veg. oil
3 large eggs
1 Tbsp. cinnamon
cupcake liners
Preheat oven to 350 degrees.  This recipes makes 24 cupcakes.  Blend all ingredients on low for 30 seconds, then for 2 more min. on medium speed. Batter should look thick.  Spoon 1/3 c. batter into each cup, filling 2/4 full.  Place pans side by side in oven. Bake until golden and springs back to the touch.  Bake 17 to 20 min.  Cool 5 min.  Use end of knife and go around tops of cupcakes carefully to loosen. Cool 15 more minutes.
Cinnamon Cream Cheese Frosting
1 pkg. 8 oz. reduced fat cream cheese
4 Tbsp. butter at room temperature
3 cups powdered sugar, sift
1 tsp. cinnamon
Blend butter and cream cheese on low 30 seconds., then add powdered sugar a little at a time.  Then add the cinnamon on med. speed til well blended and fluffy. Then sprinkle  (1 Tbsp. sugar and 1/4 tsp cinnamon) on top of the cupcakes once frosted.
That's it
enjoy!
Robin
